SHRIMP AND BLACK BEAN LETTUCE WRAP

  • 1 LB Shrimp peel and deveined (tails included)

  • 1 can Vegetarian Black Beans drained

  • 3 TBS Olive oil

  • 2 TBS Grated ginger

  • 2 Cloves garlic minced

  • 1 medium onion diced

  • 2 Green Onions chopped white and green

  • 3 TBS Chopped Cilantro

  • 1 head of leafy lettuce (Boston, or green leaf are good choices)

  • 1 Avocado sliced

In a medium skillet at medium high heat add olive oil to the pan. Let the oil get warm then add garlic. Let garlic infuse olive oil for 1-2 minutes. Do not let burn. Next add the onions. Sautee until tender about 3 minutes. You will add the black beans and using a fork smash until the consistency of refried beans. Do leave some beans whole to give more texture. Add shrimp that has been cleaned and cook until lightly pink. If you over cook shrimp then get very tough and this can happen quickly so keep and eye on them. Just before the shrimp is cook add the ginger and cilantro for a little spice. Once the shrimp is cooked. Serve immediately on lettuce and make a little taco. Top with chopped green onions. You may enjoy sliced avocado on the side.
